Fred Tibbitts’ Fourth Annual Fall Evening in
Hong Kong
With Very Special Friends
Another Great Success
Fifty of the top people (Including the following: Owners, c.e.o.’s and
operational directors of world-renowned hotel chains; industry press; and FTA
wine, spirits and coffee partners) assembled for a black tie evening at the
Grand Hyatt Hong Kong on 31 October 2003. This was the Fourth Annual Fred
Tibbitts & Associates Fall Evening in Hong Kong with Very Special Friends.
The reception was sponsored by Moet-Hennessy Asia, and featured Moet &
Chandon Brut Imperial. Guests were greeted by beautiful Korean ladies in
traditional hanbok costumes and ceremonially announced upon arrival Royal Court
style by crier with mace magnanimous.
Christian and Buddhist prayers, followed by as many as sixteen Loyalty
Toasts, preceded the four-course dinner. Madame Eva Cheng, Commissioner for
Tourism, led these toasts that included ambassadors, consul generals,
dignitaries and concluded with a declamation style toast by the renowned
American lyricist, John Blake “To Knickerbocker”, which particularly pleased one
of the most esteemed guests, The Honorable Andre Brouwer, Consul General of The
Netherlands in Hong Kong.
The culinary team at the Grand Hyatt Hong Kong did a masterful job preparing
a bountiful feast of lobster bavaroise with truffle flan, marinated scallops and
grilled porcini mushrooms with parsley sauce, followed by oven glazed beef
tenderloin and foie gras with pumpkin sage cannelloni and potato chestnut cake,
a trio of French cheeses and finally warm-cold vanilla sable on marinated
strawberry and yogurt ice cream with Douwe Egberts coffee: All paired perfectly
with ultra-premium wines from Australia, South Africa, France, California and
Chile.
Two Korean traditional music performers came to perform “fansori”, courtesy
of Professor Moo Hyung Chung, Jeonju University Korea and The Honorable Kang
Keun-Taik, Consul General of the Republic of Korea.
Cliff Wallace, Managing Director, Hong Kong Convention and Exhibition Centre,
presented the 2003 Fred Tibbitts & Associates Hospitality Award for Excellence
as a Humanitarian to Professor Kaye Chon, Chair Professor and Head, School of
Hotel & Tourism Management, The Hong Kong Polytechnic University. Fred Tibbitts
presented Professor Chon with a cash award in the amount of $5,000.00 U.S.,
which Professor Chon then turned over to Professor Poon Chung-kwong, President,
The Hong Kong Polytechnic University. President Poon announced that he is
matching the award from the University Grant Fund and it is expected that the
government will as well match the award for a total of $15,000.00 U.S. available
for scholarships.
